The capon of Cascajares

Capon is a tradicional Spanish Christmas dish that has decreased its consumption recently. It is a bird seemed a chicken, which is fed, spayed when it’s two months because it fattens, and finally, it’s the slaughter when it’s five or six months.
One of the reasons for its disappearance from tables is that it’s difficult to prepare and to cook
On the other hand, the fame of Cascajares capons has been growing since the marriage of the Prince and Princess of Asturias, who had it served at their wedding banquet, also its fame has been growing because offer the capon is offered precooked roasted.
